Who are we?
Maison Estelle is a private members club set in a Grade I-listed Georgian townhouse on Grafton Street, Mayfair. A hosted home, bringing people together that have plenty to say and nothing to prove. A new school club (no rules), with old school values of personalised service and discretion.
As a Sous Chef, your primary function is to provide leadership, management, and oversee kitchen operations at Estelle. You will support the Head Chef in ensuring the smooth operational running of the kitchen, maintaining the highest culinary standards, and delivering an exceptional dining experience for our members. You should uphold the highest standards of quality, consistency, and efficiency in line with Estelles expectations.
As Sous Chef, youll: Oversee the day-to-day operations of the kitchen, ensuring service runs smoothly and efficiently. Support and lead the kitchen team during service, ensuring consistency and quality across all dishes. Ensure mise en place is prepared and ready ahead of service, and that the kitchen is set up and closed down accurately and on time. Work closely with the Head Chef on menu development, ensuring creativity, seasonality, and quality are at the forefront. Monitor stock levels, ordering, and rotation to minimise waste and control costs. Maintain a clean, organised, and fully compliant kitchen, adhering to food safety, hygiene, and health and safety regulations. Train, mentor, and develop junior chefs, fostering a positive and high-performing kitchen environment. Proactively manage any member dietary requirements or special requests, ensuring an exceptional and personalised experience. Help achieve budgeted food costs, stock management, labour costs, and overall profitability. Ensure all equipment is maintained and arranged for repair when necessary. Perform any other role as required.
