Head Chef – £70–80k Package – Soho, London

We’re searching for a world-class Head Chef to lead the launch and kitchen operations of a major new opening in Soho — a high-impact, late-night Japanese restaurant offering elevated dishes built on fire, seasonality, and bold execution. With 175 covers, an open-plan kitchen, DJ-led nights, and a focus on premium but accessible dining, this is a chance to make your mark at one of the capital’s most anticipated new restaurants.
You’ll be responsible for:
– Leading a large kitchen team in a high-volume, 7-day operation
– Developing and delivering a vibrant menu that blends classic Japanese techniques with international creativity
– Maintaining standards of precision, consistency, and speed across sushi, grill, and main kitchen sections
– Working closely with senior leadership on systems, structure, and culture
– Overseeing ordering, cost controls, compliance, prep, and service
– Supporting group-level R&D and mentoring future leaders
We’re looking for a Head Chef with:
– Proven experience at the top end of Japanese cuisine in London, Tokyo, or New York
– Deep knowledge of robata, sushi, and Japanese ingredient-led cooking
– A calm but high-energy leadership style and experience building and guiding kitchen teams
– Strong operational understanding and an obsession with quality and execution
– Desire to grow with the group as it expands into new markets
